Ingredients : 2 cups all-purpose flour 1 packet (2 1/4 tsp) active dry yeast 3/4 cup warm water 1 tbsp olive oil 1 tsp sugar 1/2 tsp salt Your favorite pizza toppings (e.g., tomato sauce, cheese, vegetables, pepperoni, etc.) Instructions : In a bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy. Add the olive oil and salt to the yeast mixture and stir. Gradually add the flour to the mixture and knead the dough until it's smooth and elastic. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it doubles in size. Preheat your oven to 475°F (245°C). Punch down the risen dough and roll it out on a floured surface to your desired pizza size and thickness. Transfer the rolled-out dough to a baking sheet or pizza stone. To make Brinjal Yennegayi  (also known as Ennegayi or Stuffed Eggplant Curry), here's a traditional South Indian recipe: Ingredients :  6-8 small brinjals (eggplants) 1/2 cup roasted peanuts (coarsely powdered) 1/2 cup grated coconut 2 tablespoons sesame seeds 1 tablespoon coriander seeds 1 teaspoon cumin seeds 1 teaspoon poppy seeds 1 small onion (finely chopped) 2-3 cloves of garlic (minced) 1-inch piece of ginger (minced) 2-3 green chilies (adjust to your spice preference) 1/2 teaspoon turmeric powder 1 teaspoon red chili powder (adjust to taste) 1 teaspoon garam masala 1 tablespoon tamarind pulp Salt to taste 3 tablespoons oil Fresh coriander leaves for garnish Instructions : Wash the brinjals and make a cross-shaped incision at the base, keeping the stem intact.
